Protein Chili
Hearty, meaty, beany meal prep; less than an hour to prepare 8 servings.
Nothing fancy here. I've always enjoyed the flavor of chili--with beans of course; any one claiming chili is chili when it doesn't have beans should not be trusted.
WHAT YOU NEED
3 Lbs Lean Ground Beef (96 / 4 )
300g chopped onion
1 Packet Chili Seasoning (I did 3 because I like the taste; but this does increase the sodium!)
8 oz Bone Broth (try to find protein added)
3 Cans Kidney Beans (Drained - I did 2 cans of Light, 1 can Dark)
1 Can Rotel - No Salt
1 Can Rotel - Original (I did Ghost Pepper for a little spice)
1 Bag Fat-Free Cheddar
100g Plain Greek Yogurt
Southwest Tortilla strips (1 serving per serving of chili)
WHAT YOU DO
Add the meat to a large pan and begin browning.
Add in the onion with the meat, keep browning.
Add the Chili Seasonings; continue cooking
Add in the Bone Broth, mix well.
Add in the beans
Add in the rotel cans - finish cooking.
Add the greek yogurt, turn off the heat. Mix well.
Evenly divide into 8 servings
Sprinkle with a serving of the fat-free cheddar.
When you eat it, add the serving of the tortilla strips.
